Baked Tofu Cabbage Rolls with Beet Hummus | Super Seeds

BAKED TOFU CABBAGE ROLLS WITH BEET HUMMUS

 

Ingredients

Beet Hummus:

• 1 can chickpeas, drain and reserve juice

• 1/4 cup cooked beets

• 2 tbsp tahini

• 3 tbsp reserved chickpea juice

• 1 lemon, juiced

• S & P to taste

• Any spice you like

Baked Tofu:

• 1 block (400g) firm tofu, pat to dry and cut into strips

• 1 tsp ground cumin

• 1 tsp ground coriander

• 1 tsp smoke paprika

• 1 tbsp vegetable oil

• S & P to taste

Rolls:

• Cabbage leaves

• Carrots

• Cucumber

• Avocado

Instructions

1. Preheat oven to 180c and bake tofu for around 30 mins.

2. Thinly slice vegetables.

3. In a pan, boil water and cook cabbage leaves for 1 min and drain.

4. Assemble cabbage rolls with generous amount hummus, thinly sliced veggies and baked tofu.

5. Drizzle some creamy hot sauce made with tahini, lemon juice and Sriracha.

6. Top up with super crunchy and addictive Super Seeds!
