How easy is this mix... toasted fresh bread with fried tofu, turmeric cashew cheese, avocado, pesto & dill, topped with our Coconut Bacon.
We love our tofu simply fried in a pan with coconut oil, salt, and pepper. Let it cook on medium heat, both sides, until tofu is warm in the middle and browned on the outside.
Side note: did you know how easy it is to make cashew cheese at home? Soak cashews for a few hours and blend with your favorite spices (garlic, nutritional yeast, salt, pepper, tumeric, etc.), water, and voila! No oil necessary. Another hint: most of our local health food stores carry home-made vegan pesto sauce. Once you find your favourite, it's hard to pass up!
